In the 1841 census aged 20, not born in Middlesex, a groom and living with William and Sarah (parents?) and Thomas (brother?) at Nightingale Place, Hornsey, Ossulstone, Middlesex.
In the 1851 census as Joseph Croucher aged 30, born in Dorking, Surrey, single, a cab driver, and lodging with Henry Meggs (aged 27, born in Clare, Suffolk and a cab driver), his wife (Esther aged 32 and born in Stroud, Gloucestershire), his two daughters (Mary A aged 3 and Caroline under 1 month, both born in Clerkenwell, Middlesex), and another lodger (Charles Smith aged 27, born in Derbyshire, single and a groom) at 13 Metcalf PLace, Goswell Street, Clerkenwell, Middlesex.
He had a son born in 1857 and a daughter in 1860, both in Clerkenwell, so I assume he married before 1857. An Elizabeth Croucher died in St Pancras in October-December 1860 very close to the birth of his daughter, and I assume was his first wife. His daughter died on the 3rd April 1861 in Clerkenwell, and the 1861 census was taken on 7 April. Janet Dilly states in RootsWeb WorldConnect "No marriage found but when Elizabeth died her death certificate names her as Wife of Joseph Croucher, a Cab Driver. Sadly Elizabeth died on 16 October 1860 at 23 Judd Street giving birth to a daughter born on 15 October 1860 who also died when she was 5 months old."
In the 1861 census as Joseph Crowther (original illegible) aged 40, born in Dorking, Surrey, widowed (but I can find no evidence of a marriage), a cab driver and living at 23 Judd Street, Grays Inn Lane, St Pancras, Middlesex. Another five families were living at this address. His son was boarding with George and Jane Thackary at 12 Southampton Terrace, Islington St Mary.

In the 1871 census as Jas (sic - on the original) Croucher aged 50, born in Dockling (sic), Surrey, a cab driver and living with his wife (Sarah), two sons (Thos H and Will J), and daughter (Susan) at 58 Ossulston Street formerly Wilsted Street, Somers Town, St Pancras, London. There were four other families living at this address.
His wife died in the City in 1873.

In the 1881 census as Joseph Croucher aged 60, born in Dorking, Surrey, a cab driver, and living with his wife (Eliza), two sons (Thomas and William) and daughter (Louisa) at 18 Tonbridge Street, Grays Inn Lane, Marylebone, St Pancras.
I cannot find an entry in the 1891 census.

Jan Dilly has an entry in RootsWeb WorldConnect for Joseph (Jaz) Croucher born in 1821 in Dorking, Surrey, parents William and Sarah Croucher, christened on 22 April 1821, married Sarah Ann Hayes on 17 May 1863 in St Luke, London, by whom he had three children Thomas Henry, Louisa S and William John, his marriage in 1870 to Eliza born in 1834 in Bath, and another marriage to Elizabeth born 1824 by whom he had two children, Joseph and Elizabeth Sarah and his death on 22 November 1895 in St Pancras Workhouse London as a result of long term stroke and dementia, the death being registered by daughter Lousia.
Penny Curtis has an entry in Ancestry Public Member Trees for Joseph Croucher born in Dorking, Surrey in 1821, parents William and Sarah Croucher, and his occupation as a cab driver. Another entry gives his wife as Sarah Eliza Hayes Croucher and four children - Joseph, William John, Louise Sarah and Thomas. Lynda Jones gives his wife as Sarah Hayes who he married in 1863 and four children (Joseph, William John, Louisa and Thomas), a second wife Eliza, and his death in Middlesex in 1895.
Note that St Luke was succeded by Holborn in 1869.
